Grand Marnier

Recipe By     : How to Make Liqueurs, R.M. Byrne
Serving Size  : 12    Preparation Time :0:00
Categories    : Homemade Liqueurs

Amount  Measure       Ingredient -- Preparation Method
--------  ------------  --------------------------------
   4      cups          vodka
4                    oranges  -- juice and skin
   3      cups          castor sugar
   1      tablespoon    coriander seeds
   2 1/2  ounces        brandy extract
brown food dye  -- see note

Wash and peel the oranges. Separate pith from the skin and discard the pith. Squeeze oranges and strain well. Using a large mixing jar, place the juice, skin, vodka and coriander seeds inside. Cover securely and leave in a warm, dark place for 14 days. Strain through a coarse sieve and discard the residue. Return the juice to the jar and add brandy flavoring and sugar. Shake well until all sugar has dissolved. Let stand for at least 14 days until clear. Decant and add brown coloring mixed with a little of the liqueur. Liqueur should be a very pale brown color. Seal well and store until required.
Note: Instead of using dye, you can substitute 1 cup of brown sugar for 1 cup of the castor sugar.
