CASHEW CHICKEN SALAD
3 cups cubed cooked chicken breast
1/2 cup chopped cashew nuts
1 cup diced celery
1 cup mayonaise
1 tsp minced onion
1 tsp salt
1 tbsp lemon juice
1/4 tsp pepper
1 cucumber, peeled & diced
whole cashew nuts, for garnish
In a large mixing bowl, combine chicken, celery, onion, lemon juice, cucumber, chopped cashew nuts, mayonaise, salt and pepper. Chill until ready to serve.
This is the recipe that was used (minus the cashews) for the croissant sandwiches at the last Stake Relief Society Conference.
