Jane - sorry to send this to you but I can't get a message on to "Food & Recipies" direct - only as a reply.
Has anyone out there got a recipe for Hot & Sour Soup ? Our local Chinese rest. makes this divine and theraputic dish and (understandably) won't give us the recipe. As it is marvellous for all types of illness, especially colds, we are most eager to get our hands on it.
Can anyone out there help ?
Jackie.
I have never tried this but I found it in a Chinese cookbook from which I've tried other recipes. Hope it's what you're looking for.
hot-and-sour soup
3 cups chicken broth
1/3 pound lean pork, shredded into matchstick-size pieces
4 Chinese dried black mushrooms, soaked for 20 to 30 minutes in warm water, and sliced
2 ounces bean curd, cut into matchstick-size pieces
2 tablespoons soy sauce
2 tablespoons dry sherry
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons vinegar
1 tablespoon constarch in 2 tablespoons cold water
Bring the broth to a boil in the wok and add the pork, mushrooms, and bean curd. Simmer for 8 minutes, until the pork is done. Add the soy sauce, sherry, salt, pepper, vinegar, and the cornstarch mixture. Continue to heat until the soup has thickened. Serve hot.
