Here's a soup recipe thats out of this world. It is a major crowd-pleaser!
Smoked Sausage & Bean Soup
1 medium onion, finely chopped
1 tsp. minced garlic
2 tbsp. butter
6 cups water
2 medium potatoes, cubed
16oz. cooked smoked sausage, sliced
1 15oz. can red kidney beans, drained
3 beef boullion cubes
2 cups chopped cabbage
1/4 cup tomato paste
3 tbsp. vinegar
In a 4 quart dutch oven, cook onion and garlic in butter until tender but not brown. Add the water, potatoes, sausage, beans and boullion. Heat to boiling. Reduce heat; simmer, covered for 45 minutes. Add the cabbage, tomato paste and vinegar. Simmer, covered, 30 minutes more or until cabbage is tender.
